Last Friday, students at Washington Jesuit Academy were treated to Fiesta Fajita Friday by our Healthy School Foods Team. DC Central Kitchen’s dietetic intern, Lauryn Woodruff, organized the latin themed meal and collected feedback from the students on the flavor of the meal. The menu consisted of chicken fajitas on whole wheat tortillas with sautéed peppers and onions, salsa, roasted jicama, and fresh pineapple.
Despite being unfamiliar with jicama, a root vegetable native to Mexico, most students eagerly tried the new dish. Students were also given the option of adding Tajin, a traditional Mexican chili seasoning to their meal. The pineapple with Tajin was a hit as students were returning to the lunch line for seconds and even third helpings of the spicy fruit!
“Everything was chillin,” one student remarked about the meal.
